Bakers Bringing Bibingka Back

The -ber months are here! The very long Pinoy Christmas season begins, and we can again greet cold fronts with warm bibingka and puto bumbong. 

The bibingka in particular has a combination of sweet and savory that makes it the perfect bite anytime of the day. But, even the best of the classics need modern takes to refresh it and introduce it to a new generation of food lovers. 

Here are 3 bakers bringing bibingka to the modern age. Not only are they respectful renditions of a Filipino Christmas classic, they taste AND look super delicious too. It’s time to bring bibingka back!

Carmela Carating combines two classics with the Ultimate Pamaskong Cake: Puto bumbong and Bibingka.

In the bakery’s own words, the Ultimate Pamaskong Cake is “layers of Bibingka Chiffon Cake, Creamy Leche Flan, Ube Chiffon Cake then a layer of Latik, Muscovado and Pure Macapuno from Jardin ni Nanay. Covered in Ube Swiss Meringue then finally topped with Queso de Bola”

The Ultimate Pamaskong Cake looks like a great centerpiece for Noche Buena, but we won’t blame you if you had it all for yourself.

 

Adie’s Delight

As it’s name suggests, The Classic Triple Cheese Bibingka from Adie’s Delight is more about going back to the fundamentals. Instead of going for a zany, over the top version, The Classic Triple Cheese Bibingka is made from real galapong and topped with Queso De Bola.

Smartcook Oven Toaster Bibingka

For the bibingka batter:

  • 1 egg
  • 1/4 cup melted butter, room temperature
  • 3/4 cup coconut milk
  • 3/4 cup glutinous rice flour, sifted
  • 1/2 cup rice flour, sifted
  • 1/2 cup white sugar
  • 2 tsp baking powder
  • For toppings:
  • Salted egg, sliced
  • Ham, sliced
  • grated cheese
  • Additional butter for topping

 

Others:

banana leaves, heated until shiny

 

Procedure:

  1. Pre-heat Smartcook Oven Toaster to 190°c.
  2. Mix dry ingredients until evenly distributed.
  3. In a separate bowl, combine egg and wet ingredients until mixed.
  4. Make a well in the flour mixture, pour in egg mixture.
  5. Whisk until mixture forms a batter. Avoid clumps and take care not to overwork the batter for a lighter bibingka.
  6. Line metal cupcake molds with banana leaves and fill until a little over halfway
  7. Top mixture with salted egg, ham, cheese according to preference.
  8. Bake for 15 to 20 minutes or until bibingka passes the toothpick test.
  9. Serve and enjoy!

For items past warranty period

Items past their warranty period can still be diagnosed and repaired if possible. The customer however shall shoulder expenses for parts, labor, and shipping.

Returns and Replacements

When you receive your order, please take a video of your unboxing and make sure all items in your order are received and have no external defects. If Kimstore does not receive any report of external defect within twenty four (24 hours) from receipt of your item it means that you received it free from external defect. Documenting your receipt and unboxing can help in case of disputes with the courier or other problems with your order.
